Ingredients:

  • 1.5 lb boneless, skinless chicken thighs
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Prepare the marinade: In a medium bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, garlic powder, salt, and black pepper until fully combined.
  2. Marinate the chicken: Place the chicken thighs in the marinade, ensuring all pieces are fully coated. Allow to marinate for a minimum of 30 minutes (up to 4 hours) for the best flavor penetration and tenderization.
  3. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  4. Bake: Arrange the marinated chicken thighs on the prepared baking sheet. Reserve any leftover marinade.
  5. Cook for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). The honey glaze should be beautifully caramelized and sticky.
  6. Serve immediately, optionally drizzling with any glaze that formed on the baking sheet.
