Ingredients:
- 1.5 lb boneless, skinless chicken thighs
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 Tbsp apple cider vinegar
- 1 Tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions:
- Prepare the marinade: In a medium bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, garlic powder, salt, and black pepper until fully combined.
- Marinate the chicken: Place the chicken thighs in the marinade, ensuring all pieces are fully coated. Allow to marinate for a minimum of 30 minutes (up to 4 hours) for the best flavor penetration and tenderization.
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Bake: Arrange the marinated chicken thighs on the prepared baking sheet. Reserve any leftover marinade.
- Cook for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). The honey glaze should be beautifully caramelized and sticky.
- Serve immediately, optionally drizzling with any glaze that formed on the baking sheet.
