Ingredients:

  • 120ml of fresh orange juice
  • 120ml of raw coconut water
  • 1.5g of cream of tartar
  • 1.5g of unrefined sea salt
  • 2.5ml of magnesium bicarbonate powder
  • 15ml of full fat coconut milk
  • 1 sprig fresh mint
  • 1 thin slice of lime

Instructions:

  1. Pour the 120ml of fresh orange juice and 120ml of raw coconut water into a 350ml glass.
  2. Add the 1.5g of cream of tartar to the liquid base.
  3. Vigorously mix the liquid for 15 seconds using a handheld frother until no white specks remain.
  4. Carefully measure the 1.5g of unrefined sea salt and 2.5ml of magnesium bicarbonate powder into the mix.
  5. Pour in the 15ml of full fat coconut milk. The fat will naturally want to float, so don't wait to mix it.
  6. Whisk the entire mixture again for another 10 to 15 seconds until the liquid is pale orange and frothy.
  7. Tap the glass gently on the counter to settle the larger bubbles.
  8. Slap the mint sprig against your palm to release the aromatic oils before placing it in the drink.
  9. Add the lime slice to the rim and serve immediately while the foam is still stiff.
