Ingredients:

  • 1 lb sweet potato, peeled and grated
  • 1 medium Granny Smith apple, peeled and grated
  • 1/4 cup yellow onion, finely minced
  • 2 tbsp unsalted butter
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cinnamon

Instructions:

  1. Grate the sweet potato and apple. Place the grated mixture into a clean kitchen towel and squeeze firmly over the sink until no more liquid drips out.
  2. In a bowl, combine the squeezed potato and apple mixture with the minced onion, salt, black pepper, and cinnamon.
  3. Heat the butter over medium-high heat in a large cast-iron skillet or non-stick pan until it begins to shimmer or brown slightly.
  4. Scoop approximately 1/3 cup of the mixture into the pan and flatten it with a spatula.
  5. Cook undisturbed for 4–6 minutes. Do not flip until the edges are deep mahogany-brown and the patty releases easily from the pan.
  6. Flip carefully and cook for another 4–5 minutes until both sides are caramelized and fragrant.
