Ingredients:

  • 6 oz baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/3 cup crumbled feta cheese
  • 1/2 cup sliced almonds
  • 1/4 cup thinly sliced red onion
  • 1/4 cup apple cider vinegar
  • 1/2 cup neutral oil
  • 2 tbsp honey
  • 1 tbsp poppy seeds
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the sliced almonds in a dry skillet over medium heat. Stir constantly for 3-5 minutes until the nuts are golden brown and smell nutty. Remove from heat immediately.
  2. Combine the apple cider vinegar, honey, poppy seeds, salt, and pepper in a jar. Slowly pour in the oil while shaking vigorously or whisking until the mixture is smooth and emulsified.
  3. In a large mixing bowl, combine the baby spinach, sliced strawberries, and red onion.
  4. Drizzle the dressing over the greens and toss gently with tongs until the leaves look glossy.
  5. Fold in the crumbled feta and toasted almonds last to maintain the texture of the cheese and the crunch of the nuts.
