Ingredients:
- 6 oz baby spinach, washed and dried
- 2 cups fresh strawberries, hulled and sliced
- 1/3 cup crumbled feta cheese
- 1/2 cup sliced almonds
- 1/4 cup thinly sliced red onion
- 1/4 cup apple cider vinegar
- 1/2 cup neutral oil
- 2 tbsp honey
- 1 tbsp poppy seeds
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place the sliced almonds in a dry skillet over medium heat. Stir constantly for 3-5 minutes until the nuts are golden brown and smell nutty. Remove from heat immediately.
- Combine the apple cider vinegar, honey, poppy seeds, salt, and pepper in a jar. Slowly pour in the oil while shaking vigorously or whisking until the mixture is smooth and emulsified.
- In a large mixing bowl, combine the baby spinach, sliced strawberries, and red onion.
- Drizzle the dressing over the greens and toss gently with tongs until the leaves look glossy.
- Fold in the crumbled feta and toasted almonds last to maintain the texture of the cheese and the crunch of the nuts.
