Ingredients:

  • 2 Large Sweet Potatoes (approx. 800g), sliced into 1/2-inch rounds
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Kosher Salt
  • 1/2 tsp Cracked Black Pepper
  • 1/4 tsp Smoked Paprika
  • 1/2 cup Feta Cheese, crumbled
  • 3 tbsp Wildflower Honey
  • 1 tbsp Fresh Thyme leaves

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, toss the 1/2-inch sweet potato rounds with extra virgin olive oil, kosher salt, black pepper, and smoked paprika until evenly coated.
  3. Arrange the rounds in a single layer on the prepared baking sheet, ensuring at least half an inch of space between each slice to allow for proper air circulation and crisping.
  4. Roast for 20-25 minutes, flipping halfway through, until the potatoes are tender inside and have developed a firm, caramelized exterior.
  5. Remove from the oven and immediately top each round with crumbled feta while still warm.
  6. Drizzle the honey over the rounds and garnish with fresh thyme leaves. Serve immediately to maintain the textural contrast.
