Ingredients:
- 2 Large Sweet Potatoes (approx. 800g), sliced into 1/2-inch rounds
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Kosher Salt
- 1/2 tsp Cracked Black Pepper
- 1/4 tsp Smoked Paprika
- 1/2 cup Feta Cheese, crumbled
- 3 tbsp Wildflower Honey
- 1 tbsp Fresh Thyme leaves
Instructions:
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, toss the 1/2-inch sweet potato rounds with extra virgin olive oil, kosher salt, black pepper, and smoked paprika until evenly coated.
- Arrange the rounds in a single layer on the prepared baking sheet, ensuring at least half an inch of space between each slice to allow for proper air circulation and crisping.
- Roast for 20-25 minutes, flipping halfway through, until the potatoes are tender inside and have developed a firm, caramelized exterior.
- Remove from the oven and immediately top each round with crumbled feta while still warm.
- Drizzle the honey over the rounds and garnish with fresh thyme leaves. Serve immediately to maintain the textural contrast.
