Ingredients:

  • 8 bone-in, skin-on chicken thighs (approx. 1.2kg / 2.6 lbs)
  • 2 whole heads of garlic, separated into cloves and peeled
  • 2 tbsp extra virgin olive oil
  • 1.5 tsp kosher salt
  • 1 tsp cracked black pepper
  • 3 tbsp unsalted butter, melted
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika

Instructions:

  1. Pat the 8 bone in, skin on chicken thighs completely dry with paper towels.
  2. Rub the 2 tbsp extra virgin olive oil over the skin and underside, then sprinkle evenly with the 1.5 tsp kosher salt and 1 tsp pepper.
  3. Let the chicken sit at room temperature for 45 minutes.
  4. Place the chicken on a sheet pan and scatter the 2 heads of smashed garlic cloves around and slightly under the thighs.
  5. Place in a preheated 400°F (200°C) oven for 25 minutes until the skin starts to turn golden brown.
  6. In a small bowl, whisk together the 3 tbsp melted butter, 1 tbsp lemon juice, 1 tsp oregano, and 0.5 tsp smoked paprika.
  7. Carefully brush the garlic butter mixture over each thigh.
  8. Roast for another 10 minutes until the skin is crackling and the internal temperature reaches 175°F (80°C).
  9. Remove from the oven and let the chicken sit for 5 minutes before serving.
  10. Spoon the softened, roasted garlic cloves over the chicken, mashing them slightly into the skin as you eat.
