Ingredients:
- 5 lbs Steak (Sirloin or Filet Mignon), cut into 1-inch cubes
- 1 Tbsp Soy Sauce (Low Sodium)
- 1 tsp Toasted Sesame Oil
- 2 medium Courgette (Zucchini), sliced into 1/2-inch thick rounds
- 1 medium Yellow Onion, cut into large chunks
- 2 Tbsp Neutral Oil (Rapeseed or Canola)
- Salt and Black Pepper, To taste
- 4 Tbsp Unsalted Butter, cold, cut into 4 pieces
- 4 cloves Garlic, freshly minced
- 1 Tbsp Soy Sauce (Full strength)
- 1/2 cup Mayonnaise (Full Fat) (For Yum Yum Sauce)
- 2 Tbsp Tomato Ketchup (For Yum Yum Sauce)
- 1 tsp Rice Vinegar (For Yum Yum Sauce)
- 1 tsp Caster Sugar (For Yum Yum Sauce)
- 1/2 tsp Smoked Paprika (For Yum Yum Sauce)
- 1-2 Tbsp Water (For Yum Yum Sauce)
Instructions:
- Marinate the Steak and Prepare the Sauces: Toss the cubed steak with 1 Tbsp low-sodium soy sauce, sesame oil, and pepper. Allow to rest at room temperature for 30 minutes. Whisk together all Yum Yum Sauce ingredients until smooth and chill. Gently melt the butter in a small saucepan, stir in the minced garlic and 1 Tbsp full-strength soy sauce, and keep warm for basting.
- Sear the Vegetables: Place a cast iron skillet over high heat until smoking hot. Add 1 Tbsp neutral oil, then immediately add the onion and courgette chunks. Season with salt. Sauté quickly for 3-4 minutes until tender-crisp and charred. Remove the vegetables from the pan and set aside, reserving the remaining oil in the skillet.
- Achieve the Steak Sear: Ensure the pan is still smoking hot. Add the remaining 1 Tbsp of neutral oil. Place the steak cubes in a single layer (work in batches if necessary). Do not move the steak for the first 90 seconds to create a deep sear or 'bark'.
- Baste and Finish: Flip the steak cubes and reduce the heat slightly to medium-high. Drizzle or brush a generous amount of the garlic-butter baste over the steak pieces. Continue cooking for 1-2 minutes per side, basting continuously until the steak reaches your desired internal temperature (e.g., 135°F / 57°C for medium-rare).
- Rest and Serve: Remove the steak from the pan and pour any remaining garlic butter baste over it. Allow the steak to rest for 5 minutes. Finally, toss the rested steak cubes with the reserved vegetables. Serve immediately alongside the chilled Yum Yum Sauce.
