Ingredients:

  • 3 cups (270g) Old Fashioned Rolled Oats
  • 1 tsp Baking powder
  • 1/2 tsp Sea salt
  • 1 cup (250g) Creamy natural peanut butter
  • 1/2 cup (120ml) Honey or Maple Syrup
  • 2 Large eggs
  • 1/2 cup (90g) Semi sweet chocolate chips
  • 1/4 cup crushed peanuts

Instructions:

  1. Preheat your oven to 175°C and line your 20x20 cm pan with parchment paper.
  2. Combine 250g peanut butter, 120ml honey, 2 eggs, and 1 tsp vanilla in your bowl. Note: Whisk until the mixture is smooth and emulsified.
  3. Stir in 270g oats, 1 tsp baking powder, and 1/2 tsp sea salt.
  4. Gently stir in 90g chocolate chips until evenly distributed.
  5. Pour the thick batter into your prepared tin.
  6. Use the back of a spoon to flatten the top. Note: This ensures the bars don't fall apart later.
  7. Sprinkle 1/4 cup crushed peanuts over the top, pressing them in slightly.
  8. Place in the oven for 20 minutes until the edges are golden and the center is set.
  9. Leave them in the pan for at least 15 minutes. Wait for them to firm up before lifting the parchment.
  10. Cut into 16 squares using a sharp, non serrated knife.
