Ingredients:
- 3 cups (270g) Old Fashioned Rolled Oats
- 1 tsp Baking powder
- 1/2 tsp Sea salt
- 1 cup (250g) Creamy natural peanut butter
- 1/2 cup (120ml) Honey or Maple Syrup
- 2 Large eggs
- 1/2 cup (90g) Semi sweet chocolate chips
- 1/4 cup crushed peanuts
Instructions:
- Preheat your oven to 175°C and line your 20x20 cm pan with parchment paper.
- Combine 250g peanut butter, 120ml honey, 2 eggs, and 1 tsp vanilla in your bowl. Note: Whisk until the mixture is smooth and emulsified.
- Stir in 270g oats, 1 tsp baking powder, and 1/2 tsp sea salt.
- Gently stir in 90g chocolate chips until evenly distributed.
- Pour the thick batter into your prepared tin.
- Use the back of a spoon to flatten the top. Note: This ensures the bars don't fall apart later.
- Sprinkle 1/4 cup crushed peanuts over the top, pressing them in slightly.
- Place in the oven for 20 minutes until the edges are golden and the center is set.
- Leave them in the pan for at least 15 minutes. Wait for them to firm up before lifting the parchment.
- Cut into 16 squares using a sharp, non serrated knife.
