- 0.25 cup unsweetened shredded coconut

- 0.25 tsp fine sea salt
Instructions:
- Toss the 2 cups old-fashioned rolled oats, 2 tbsp ground flaxseed, and 0.25 tsp fine sea salt into your large bowl. Note: Mixing the salt with the dry oats first prevents salty pockets in the final snack.
- Pour in the 1 cup creamy natural peanut butter, 0.5 cup raw honey, and 1 tsp pure vanilla extract.
- Use your spatula to fold the mixture until no dry oat patches remain.
- Add the 0.5 cup mini dark chocolate chips and 0.25 cup unsweetened shredded coconut.
- Place the entire bowl in the refrigerator for 30 mins. Wait until the mixture feels firm and less tacky to the touch.
- Use a small scoop to create 20 even mounds on a parchment lined tray.
- Roll each mound between your palms until the surface is smooth and slightly glossy.
- Place the tray back in the fridge for 15 mins to let the shapes lock in.
- Move the finished spheres into an airtight container.
- Serve chilled. These are best enjoyed straight from the fridge for the most satisfying snap.
