Ingredients:

  • 5 cups (750g) peeled and sliced peaches
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (120ml) whole milk

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a 9x9 inch baking dish, toss the peaches with 1/2 cup sugar, cornstarch, cinnamon, and lemon juice. Spread the fruit evenly.
  3. In a mixing bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt.
  4. Stir in the melted butter and milk until just combined; do not overmix.
  5. Pour the batter over the peaches, spreading evenly or dropping in dollops for a rustic look.
  6. Bake for 35–40 minutes until the topping is deep golden brown and the peach juices are bubbling around the edges.
