Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 cup (240ml) warm water
  • 2.25 tsp (7g) active dry yeast
  • 1 tbsp (12g) granulated sugar
  • 1 tsp (6g) fine sea salt
  • 2 tbsp (30ml) extra virgin olive oil
  • 8 oz (225g) full-fat cream cheese, softened
  • 1 cup (100g) shredded sharp white cheddar
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 0.5 tsp cracked black pepper
  • 4 tbsp (56g) unsalted butter, melted
  • 0.5 cup (45g) grated Parmesan cheese
  • 1 tsp garlic powder
  • 0.5 tsp flaky sea salt

Instructions:

  1. In a stand mixer or bowl, combine warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
  2. Add the flour, salt, and olive oil. Knead using a dough hook on medium-low speed until smooth and elastic. Place in a greased bowl, cover, and let rise for 60 minutes in a warm environment until doubled in size.
  3. In a medium bowl, mix softened cream cheese, shredded cheddar, minced garlic, parsley, oregano, and black pepper until uniform.
  4. Scoop the cheese mixture into 24 small balls (approx. 2 tsp each). Place on a plate and chill in the refrigerator while the dough finishes rising.
  5. Punch down the risen dough and divide into 24 equal pieces (about 30g each). Flatten each piece, place a chilled cheese ball in the center, and pinch the dough tightly to seal.
  6. Preheat oven to 400°F (200°C). Arrange the bites on a parchment-lined baking sheet.
  7. Whisk together melted butter and garlic powder. Brush each bite with the butter mixture and sprinkle with half of the grated Parmesan.
  8. Bake for 12–15 minutes until golden brown. Finish with remaining Parmesan and flaky sea salt before serving.
