Ingredients:
- 3 cups (375g) all-purpose flour
- 1 cup (240ml) warm water
- 2.25 tsp (7g) active dry yeast
- 1 tbsp (12g) granulated sugar
- 1 tsp (6g) fine sea salt
- 2 tbsp (30ml) extra virgin olive oil
- 8 oz (225g) full-fat cream cheese, softened
- 1 cup (100g) shredded sharp white cheddar
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp dried oregano
- 0.5 tsp cracked black pepper
- 4 tbsp (56g) unsalted butter, melted
- 0.5 cup (45g) grated Parmesan cheese
- 1 tsp garlic powder
- 0.5 tsp flaky sea salt
Instructions:
- In a stand mixer or bowl, combine warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
- Add the flour, salt, and olive oil. Knead using a dough hook on medium-low speed until smooth and elastic. Place in a greased bowl, cover, and let rise for 60 minutes in a warm environment until doubled in size.
- In a medium bowl, mix softened cream cheese, shredded cheddar, minced garlic, parsley, oregano, and black pepper until uniform.
- Scoop the cheese mixture into 24 small balls (approx. 2 tsp each). Place on a plate and chill in the refrigerator while the dough finishes rising.
- Punch down the risen dough and divide into 24 equal pieces (about 30g each). Flatten each piece, place a chilled cheese ball in the center, and pinch the dough tightly to seal.
- Preheat oven to 400°F (200°C). Arrange the bites on a parchment-lined baking sheet.
- Whisk together melted butter and garlic powder. Brush each bite with the butter mixture and sprinkle with half of the grated Parmesan.
- Bake for 12–15 minutes until golden brown. Finish with remaining Parmesan and flaky sea salt before serving.
