Ingredients:

  • 1 cup Frozen Pink Dragon Fruit Cubes (Pitaya)
  • 1 cup Frozen Mango Chunks
  • 1 medium Frozen Banana Slices
  • 2 tbsp Plain Greek or Coconut Yogurt
  • 1/4 – 1/2 cup Unsweetened Almond Milk (start with 1/4 cup)
  • 1 tsp Maple Syrup or Honey (optional)
  • 1/2 tsp Vanilla Extract
  • 1/4 cup Granola
  • 1/4 cup Fresh Berries (blueberries, raspberries)
  • 1 tbsp Flaked Coconut
  • 1 tsp Chia or Hemp Seeds

Instructions:

  1. Prepare the Ingredients: Ensure all fruit is completely frozen solid. If you are using fresh dragon fruit, dice it and freeze it for at least 4 hours beforehand.
  2. Load the Blender: Place the liquid ingredients (almond milk, yogurt, maple syrup, vanilla) into a high-speed blender jug first. This prevents the blades from seizing.
  3. Add the Solids: Add the frozen dragon fruit, frozen mango, and frozen banana slices on top of the liquid.
  4. The Critical Blend: Blend on the lowest setting possible. Use a tamper to continually push the frozen fruit down toward the blades. Avoid adding more liquid than absolutely necessary; only add the remaining 1/4 cup (60 ml) of almond milk if the mixture struggles to move. The final consistency should be very thick, like soft-serve ice cream.
  5. Serve Immediately: Scrape the thick mixture into two chilled serving bowls.
  6. Garnish and Finish: Arrange the chosen toppings (granola, berries, coconut flakes, chia/hemp seeds) artfully over the surface. Serve immediately before the bowl melts.
