Ingredients:
- 1 cup (225g) unsalted butter
- 3/4 cup (150g) packed dark brown sugar
- 1/4 cup (50g) granulated white sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 3 cups (270g) old-fashioned rolled oats
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) sea salt
- 1 cup (170g) dark chocolate chunks
- 1 cup (120g) dried cherries
Instructions:
- Melt butter in a saucepan over medium heat, whisking constantly until it foams and brown bits form; remove from heat and cool for 10 minutes.
- In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, and sea salt.
- In a large bowl, combine the browned butter with brown and white sugars. Beat until smooth, then stir in the egg and vanilla extract.
- Gradually fold the dry ingredients into the wet ingredients using a spatula until just combined.
- Fold in the dark chocolate chunks and chopped dried cherries until evenly distributed.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes to prevent spreading.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
- Bake for 12–14 minutes, or until the edges are set.
