Ingredients:

  • 1 cup (225g) unsalted butter
  • 3/4 cup (150g) packed dark brown sugar
  • 1/4 cup (50g) granulated white sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 3 cups (270g) old-fashioned rolled oats
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) sea salt
  • 1 cup (170g) dark chocolate chunks
  • 1 cup (120g) dried cherries

Instructions:

  1. Melt butter in a saucepan over medium heat, whisking constantly until it foams and brown bits form; remove from heat and cool for 10 minutes.
  2. In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, and sea salt.
  3. In a large bowl, combine the browned butter with brown and white sugars. Beat until smooth, then stir in the egg and vanilla extract.
  4. Gradually fold the dry ingredients into the wet ingredients using a spatula until just combined.
  5. Fold in the dark chocolate chunks and chopped dried cherries until evenly distributed.
  6. Cover the dough with plastic wrap and refrigerate for at least 30 minutes to prevent spreading.
  7. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
  8. Bake for 12–14 minutes, or until the edges are set.
