Ingredients:

  • 2 large (approx. 1 lb / 450g) Granny Smith apples, cored and sliced into ½ inch rings
  • ½ cup (65g) all-purpose flour
  • 1 cup (125g) all-purpose flour
  • 2 tbsp (25g) granulated sugar
  • 1 tsp (4g) baking powder
  • ¼ tsp (1.5g) salt
  • ¾ cup (180ml) whole milk
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (50g) granulated sugar
  • 1 tbsp (8g) ground cinnamon
  • 3 cups (710ml) neutral oil

Instructions:

  1. Slice and core the Granny Smith apples into uniform rings, approximately ½ inch thick.
  2. Pat the apple rings dry with a paper towel to remove surface moisture.
  3. Toss the apple rings in the dredging flour until lightly coated, shaking off any excess.
  4. In a mixing bowl, whisk together the 1 cup of flour, 2 tbsp sugar, baking powder, and salt.
  5. Beat the egg into the milk and vanilla extract, then stir the mixture into the dry ingredients and whisk until smooth.
  6. Dip each floured apple ring into the batter, lifting and allowing excess batter to drip off for 2 seconds.
  7. Heat neutral oil in a cast iron skillet or deep fryer to 350°F (175°C).
  8. Carefully lower 3-4 rings into the oil, frying for 2-3 minutes per side until deep golden-brown and crisp.
  9. Remove rings and place on paper towels for 30 seconds to drain initial excess oil.
  10. Toss the warm rings in a mixture of ¼ cup sugar and 1 tbsp ground cinnamon.
