Ingredients:
- 2 large (approx. 1 lb / 450g) Granny Smith apples, cored and sliced into ½ inch rings
- ½ cup (65g) all-purpose flour
- 1 cup (125g) all-purpose flour
- 2 tbsp (25g) granulated sugar
- 1 tsp (4g) baking powder
- ¼ tsp (1.5g) salt
- ¾ cup (180ml) whole milk
- 1 large egg
- 1 tsp (5ml) vanilla extract
- ¼ cup (50g) granulated sugar
- 1 tbsp (8g) ground cinnamon
- 3 cups (710ml) neutral oil
Instructions:
- Slice and core the Granny Smith apples into uniform rings, approximately ½ inch thick.
- Pat the apple rings dry with a paper towel to remove surface moisture.
- Toss the apple rings in the dredging flour until lightly coated, shaking off any excess.
- In a mixing bowl, whisk together the 1 cup of flour, 2 tbsp sugar, baking powder, and salt.
- Beat the egg into the milk and vanilla extract, then stir the mixture into the dry ingredients and whisk until smooth.
- Dip each floured apple ring into the batter, lifting and allowing excess batter to drip off for 2 seconds.
- Heat neutral oil in a cast iron skillet or deep fryer to 350°F (175°C).
- Carefully lower 3-4 rings into the oil, frying for 2-3 minutes per side until deep golden-brown and crisp.
- Remove rings and place on paper towels for 30 seconds to drain initial excess oil.
- Toss the warm rings in a mixture of ¼ cup sugar and 1 tbsp ground cinnamon.
