Ingredients:

  • 1 lb lean ground beef (93% lean)
  • 0.5 lb ground pork
  • 0.5 cup panko breadcrumbs
  • 1 large egg, beaten
  • 2 tbsp soy sauce (low sodium)
  • 1 tsp garlic powder
  • 0.5 tsp black pepper
  • 12 oz unsweetened cranberry sauce
  • 12 oz chili sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp orange zest

Instructions:

  1. Combine ground beef, ground pork, panko breadcrumbs, egg, soy sauce, garlic powder, and black pepper in a large bowl. Mix gently by hand until just combined, then roll into small 1-inch spheres.
  2. In a medium bowl, whisk together the cranberry sauce, chili sauce, apple cider vinegar, and orange zest until the mixture is smooth and fully incorporated.
  3. Place the meatballs into the slow cooker and pour the cranberry glaze over the top. Stir gently to ensure every meatball is evenly coated.
  4. Cover and cook on High for 2 hours or Low for 4 hours, until the meatballs reach an internal temperature of 165°F (74°C).
