Ingredients:
- 1 lb lean ground beef (93% lean)
- 0.5 lb ground pork
- 0.5 cup panko breadcrumbs
- 1 large egg, beaten
- 2 tbsp soy sauce (low sodium)
- 1 tsp garlic powder
- 0.5 tsp black pepper
- 12 oz unsweetened cranberry sauce
- 12 oz chili sauce
- 1 tbsp apple cider vinegar
- 1 tsp orange zest
Instructions:
- Combine ground beef, ground pork, panko breadcrumbs, egg, soy sauce, garlic powder, and black pepper in a large bowl. Mix gently by hand until just combined, then roll into small 1-inch spheres.
- In a medium bowl, whisk together the cranberry sauce, chili sauce, apple cider vinegar, and orange zest until the mixture is smooth and fully incorporated.
- Place the meatballs into the slow cooker and pour the cranberry glaze over the top. Stir gently to ensure every meatball is evenly coated.
- Cover and cook on High for 2 hours or Low for 4 hours, until the meatballs reach an internal temperature of 165°F (74°C).
