Ingredients:

  • 1 whole Kirkland Signature Rotisserie Chicken, skin and bones removed (approx. 900g meat)
  • 1 tbsp chicken broth or rotisserie jus
  • 1 cup high-quality mayonnaise
  • 1 tsp distilled white vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp onion powder
  • 0.5 tsp granulated sugar
  • 0.25 tsp salt
  • 0.25 tsp cracked black pepper
  • 1 cup celery, very finely diced
  • 0.25 cup green onions, thinly sliced

Instructions:

  1. Remove all meat from the rotisserie chicken while it is still warm, discarding the skin and bones.
  2. Break the chicken into bite-sized pieces by hand or with two forks until no large chunks remain.
  3. In a separate small bowl, whisk together the mayonnaise, vinegar, mustard, onion powder, sugar, salt, and pepper until smooth.
  4. In a large mixing bowl, combine the shredded chicken, chicken broth, finely diced celery, and green onions.
  5. Fold the dressing into the chicken mixture using a rubber spatula until every fiber is coated and the salad reaches a cohesive, spreadable consistency.
