Ingredients:

  • 3 large overripe bananas (approx. 340g mashed)
  • 0.5 cup unsalted butter (113g), melted and cooled
  • 0.75 cup brown sugar (150g), packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2 tbsp full-fat sour cream or Greek yogurt
  • 1.5 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon

Instructions:

  1. Mash bananas in a large bowl until mostly smooth. Whisk in the melted butter, brown sugar, egg, vanilla, and sour cream until the mixture is glossy and well-combined.
  2. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. Using a silicone spatula, gently fold the dry ingredients into the wet ingredients just until no streaks of white flour remain. Do not over-mix.
  4. Pour the batter into a greased and parchment-lined 9x5 inch loaf pan.
  5. Bake at 350°F (175°C) for 60 minutes until the top is deep mahogany and a toothpick inserted into the center comes out clean.
