Ingredients:
- 3 large overripe bananas (approx. 340g mashed)
- 0.5 cup unsalted butter (113g), melted and cooled
- 0.75 cup brown sugar (150g), packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 2 tbsp full-fat sour cream or Greek yogurt
- 1.5 cups all-purpose flour (190g)
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 tsp ground cinnamon
Instructions:
- Mash bananas in a large bowl until mostly smooth. Whisk in the melted butter, brown sugar, egg, vanilla, and sour cream until the mixture is glossy and well-combined.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Using a silicone spatula, gently fold the dry ingredients into the wet ingredients just until no streaks of white flour remain. Do not over-mix.
- Pour the batter into a greased and parchment-lined 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 60 minutes until the top is deep mahogany and a toothpick inserted into the center comes out clean.
