Ingredients:
- 4 tbsp (57g) unsalted butter
- 10 oz (283g) mini marshmallows
- 6 cups (540g) puffed rice cereal
- 2 cups (200g) circus animal cookies, roughly chopped
- 1/4 cup (40g) rainbow nonpareil sprinkles
- 1 tsp (5ml) vanilla extract
Instructions:
- Place the butter in a large heavy bottomed pot over low heat until completely melted and bubbling slightly.
- Stir in the mini marshmallows, stirring constantly until the mixture is a glossy, uniform liquid.
- Remove the pot from the heat immediately once the last lump disappears. Note: Overheating here leads to hard treats.
- Stir in the vanilla extract quickly before the marshmallow sets.
- Gently fold in the puffed rice cereal until every piece is coated in the marshmallow mixture.
- Fold in the chopped circus animal cookies using a light hand to keep the cookie chunks intact.
- Line your 9x13 inch baking pan with parchment paper and transfer the mixture inside.
- Using a greased spatula, press the mixture down lightly to avoid creating a dense texture.
- Immediately shower the top with rainbow sprinkles, pressing them very slightly into the surface so they adhere.
