Ingredients:

  • 4 tbsp (57g) unsalted butter
  • 10 oz (283g) mini marshmallows
  • 6 cups (540g) puffed rice cereal
  • 2 cups (200g) circus animal cookies, roughly chopped
  • 1/4 cup (40g) rainbow nonpareil sprinkles
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Place the butter in a large heavy bottomed pot over low heat until completely melted and bubbling slightly.
  2. Stir in the mini marshmallows, stirring constantly until the mixture is a glossy, uniform liquid.
  3. Remove the pot from the heat immediately once the last lump disappears. Note: Overheating here leads to hard treats.
  4. Stir in the vanilla extract quickly before the marshmallow sets.
  5. Gently fold in the puffed rice cereal until every piece is coated in the marshmallow mixture.
  6. Fold in the chopped circus animal cookies using a light hand to keep the cookie chunks intact.
  7. Line your 9x13 inch baking pan with parchment paper and transfer the mixture inside.
  8. Using a greased spatula, press the mixture down lightly to avoid creating a dense texture.
  9. Immediately shower the top with rainbow sprinkles, pressing them very slightly into the surface so they adhere.
