Ingredients:

  • 4 cups powdered sugar (500g), sifted
  • 1/2 cup unsalted butter (113g), softened
  • 2 tablespoons light corn syrup
  • 4 tablespoons heavy cream (approx. 60g)
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine sea salt
  • gel food coloring as needed

Instructions:

  1. Sift the powdered sugar into a large mixing bowl. Add the softened butter and beat on low speed using a paddle attachment until the mixture resembles fine breadcrumbs.
  2. Add the light corn syrup, vanilla extract, sea salt, and 3 tablespoons of heavy cream. Increase the mixer speed to medium-high and whip for exactly 2 minutes until the frosting is bright white and velvety.
  3. Check the consistency. If the frosting is too stiff, add the remaining tablespoon of cream. For flooding consistency, continue adding cream in small increments until the desired flow is reached.
